Chocolate lovers will be all smiles with this treat! They’re like those festive holiday chocolates that many of us grew up with, except these have no added sugar and are made with real fruit.
No sugar is necessary with these stuffed dates that pack a sweet caramel flavor.
Dates are sweet enough on their own, cane sugar just isn’t needed.
Plus you get the sweet juice from the pomegranate arils which adds a lovely, tart, juicy bite.
Yes, chocolate is involved, but if you want to stay away from cane sugar there are options available.
My preference is to use stevia-sweetened chocolate chips, they are always my go-to and taste delicious. This is what I use.
There are also allergy-friendly chocolate chips on the market, sold at most natural food stores, but they are sweetened with cane sugar. If that’s not an issue for you, then by all means get those!
You can easily find the stevia-sweetened chocolate chips online and most natural food stores carry them now too.
Other options would be to look for coconut sugar sweetened, maple sweetened and or honey sweetened “Paleo” chocolate bars and use those instead – there are plenty to choose from online.
These are so easy to make!
All you have to do is make little slits in the dates, remove the pits, stuff them with pomegranate arils and dip them in the melted chocolate mixture. That’s it!
You can be enjoying and serving these little chocolate dessert bites in less than 30 minutes if you do the prep work quickly (but safely of course).

Chocolate Dipped Pomegranate Stuffed Dates
Chocolate Dipped Pomegranate Stuffed Dates are the most tantalizing little bites! These sticky medjool dates taste just like caramel dipped in delectable chocolate goodness and they have a surprise, tart, juicy bite on the inside that is so good!
Ingredients
Stuffed Dates:
- 13-15 Medjool dates
- 1/2 cup pomegranate arils (from about 1/4 of a whole pomegranate)
- Optional sea salt flakes - for sprinkling over melted chocolate
Chocolate Coating:
- 1/2 cup stevia-sweetened chocolate chips (<-- I use these sugar-free stevia-sweetened chocolate chips) or allergy-friendly chocolate chips
- 1 1/2 tbsp grass-fed butter, ghee, or coconut oil
- 1/16 teaspoon Celtic sea salt(<-- this is my favorite sea salt)
Instructions
- Line a baking sheet with unbleached parchment paper. Place it in the freezer to chill while you prepare everything.
- Use a paring knife to carefully make a slit (small slice) through half of the Medjool date lengthwise, taking care not to slice all the way through and being mindful of the pit. Repeat until all dates have the slit made. Remove all of the pits and discard.
- Fill each date with about 1 teaspoon of pomegranate arils - the amount will vary depending on the size of the date. Just stuff with enough pomegranate arils to fill it, but do not overstuff. Set aside.
To Make the Chocolate:
- In a small saucepan over low heat or using a double boiler, add the chocolate chips, your healthy fat of choice and sea salt and allow to melt - stirring often. Remove from the heat as soon as chocolate chips are melted and the fat is fully incorporated.
How To:
- Dip each pomegranate stuffed date halfway into the melted chocolate and immediately place on the chilled lined baking sheet. When all dates have been dipped, if you'd like to sprinkle a small amount of flaked sea salt, do so now - lightly sprinkle a few flecks of salt over the melted chocolate.
- Immediately return the chocolate dipped pomegranate stuffed dates on the baking sheet to the freezer for 10 minutes to set.
- Serve immediately or store for later.
Notes
YOU WILL NEED: Unbleached Parchment Paper, Baking Sheet {that can be placed in the freezer}, Small Saucepan
- Store extra chocolate dipped pomegranate stuffed dates in an airtight container in the refrigerator for up to 2 days. You can also store them in the freezer - my family actually prefers them this way. It's a fun little bite when they're frozen - just let them sit out at room temperature for at least 15 minutes before enjoying.
