Creamy oatmeal is meant to be prepared traditionally …
Did you know that grains are better for you when they are soaked properly? I know, I know … we’re all busy people and who has the time to do advance preparation? Well guess what? It’s super easy! And actually speeds up the cooking time of making the oatmeal.
This old-fashioned method of making authentic porridges has been around for a LONG time. But sadly, many people these days don’t seem to have a clue about traditional cooking. Soaking grains is so important because grains have enzyme inhibitors that block nutrients from being absorbed and cause digestion issues.
Using the traditional practices of soaking helps your body absorb the nutrients that the whole grain has + it’s much easier for your body to digest.
This beautiful comfort food will only take minutes to cook up when you soak the grains the day before you’re ready to eat a delicious bowl of oatmeal. Soaking is so worth it!
Now … just because it’s real food oatmeal doesn’t mean it has to be boring. Have I got a treat for you! May I introduce you to Cinnamon Roll Oatmeal?! This delectable breakfast is meant to be savored. Every bite is true bliss.
First it starts with a quick blend of the rolled oats the day before you want to eat the oatmeal. All you have to do is grind up the oats into a flour, this literally takes minutes in a food processor or blender. Then prepare the oats the traditional way, again, super easy! Dump your ground oats into a mason jar, add your choice of culture {like lemon juice or organic apple cider vinegar}, warm up some water and pour it over the top of the ground oats. Cover it up and leave out on the counter for 24 hours. Simple right?!
The next day you get to add all of the lip-smacking goodness. Again, everything takes minutes to throw together. Melt some butter with maple sugar + lots of cinnamon. Whip up some honey cream cheese glaze. And cook up that oatmeal, just dump it all in a pot, add some more water and it will be done cooking in under 5 minutes.
This creamy Cinnamon Roll Oatmeal is the perfect special weekend breakfast to share with someone you love. It would make a lovely holiday breakfast + a fun meal for company too because it takes such little time to prepare + it’s so good!
Cinnamon Roll Oatmeal
YOU WILL NEED: Food Processor or High Efficiency Blender, Quart Mason Jar or Glass Container with Lid, Small Saucepan, Large Saucepan with high edges, Mixing Bowls, Hand-Held Mixer

Cinnamon Roll Oatmeal {Soaked + Gluten Free}
NOTE: 24 hour Advance Preparation Required
Ingredients
Oatmeal:
- 2 cups gluten free rolled oats
- 2 1/2 cups WARM filtered water - for soaking
- 2 tablespoons organic raw apple cider vinegar, lemon juice, whey or kefir
- 1 1/2 cups filtered water - for cooking
- 2 tablespoons organic maple sugar
- 1 teaspoon organic vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 to 1/2 teaspoon Celtic sea salt (<-- this is my favorite sea salt)
Cinnamon Topping:
- Cinnamon Topping:
- 2 tablespoons pasture butter or ghee
- 3 tablespoons organic maple sugar
- 1 1/2 teaspoons [ground cinnamon]
Cream Cheese Glaze:
- 4 ounces organic cream cheese, softened {I use Nancy's brand}
- 3 tablespoons light colored raw honey {I used creamed clover}
- 1/2 teaspoon organic vanilla extract
Instructions
To Make the Creamy Oatmeal:
- 24 hours BEFORE you want to make the oatmeal, add dry oats to a food processor or high efficiency blender and pulse until oats become a powder - about 3 to 4 minutes. I used my Blendtec Twister Jar to grind the oats.
- Place ground oats in a quart mason jar or large glass bowl with lid.
- Heat 2 1/2 cups water just until warm {do not simmer or boil}, it should be warmer than room temperature, but not too hot to touch. Pour warm water over oats in the mason jar. Add culture of choice - my preference is unfiltered apple cider vinegar or lemon juice. Mix with a spoon and cover the mason jar with a lid. Leave out on the counter {out of sunlight} for 24 hours.
- 24 hours AFTER soaking the ground oats, dump the oats mixture into a saucepan with high sides. Add 1 1/2 cups water to the pot and whisk to combine.
- Bring to a low boil, stirring constantly with a whisk, reduce heat and simmer for about 2 minutes. Remove from heat.
- Stir in 2 tablespoons organic maple sugar, vanilla extract, ground cinnamon and sea salt.
- Next get ready to top it with the cinnamon topping and cream cheese glaze.
To Make the Cinnamon Maple Sugar Topping:
- Add pasture butter or ghee to a small saucepan. Add organic maple sugar and ground cinnamon. Gently heat over medium low until butter/ghee is melted. Stir to combine.
To Make the Honey Cream Cheese Glaze:
- Add softened cream cheese, honey and vanilla to a mixing bowl. Using a hand-held mixer, whip until smooth and creamy, just a few minutes.
How to Assemble:
- Place desired amount of cooked oatmeal in serving bowls. Drizzle some cinnamon maple sugar topping on top of the hot oatmeal then add desired amount of the honey cream cheese glaze to the top. [Tip: I place the cream cheese glaze in a homemade piping bag - a small ziplock-type sandwich baggie. Cut a small slit off of one bottom corner to create a piping opening. Add cream cheese glaze to bag, twist like a piping bag and gently squeeze out the glaze.]
- Serve immediately + enjoy!

Oh Emily this is lovely! Thank you for this great yummy idea!
Thank you xo This might be one of my favorite breakfasts ever 😉
Oh boy. This looks amazing! I am not a fan of cinnamon rolls but I know I would be a fan of this oatmeal because the oats would cut the sweetness. And the maple topping…Delicious!
Thank you! Yes, no where as sweet as a cinnamon roll, but the flavor is still there. 🙂
I have been craving some oats this last week since it has been getting much cooler here in Seattle! I’ll be making this very soon! Already looking forward to it!
I hope you get to make some and enjoy it! 🙂 We’re getting cooler weather in the mornings now {in Northern CA} but it’s still pretty hot during the day.
I love your introduction about how and why to soak. Yes, it really is quick and easy, and worth it. Grinding the oats is a great idea for creaminess, yummy!! LOVE the toppings, so creative and delicious! Love what you said about savoring.
Aww thank you xo Soaking really makes a difference and I love how grinding the oats makes it so creamy.
Emily,
This just made my mouth water. It might also be that it is cold outside and close to lunch time. Oatmeal is a staple in my diet, which is a GF and CF. I get tired of prepping it the same way over and over again, so this is a great twist that I can add to my rotation.
Oh good! Glad it’s some inspiration for you 🙂 I love oatmeal too, especially this time of year.
This looks like an amazing breakfast! Beats processed oatmeal any day!
Thanks! So true! 🙂
Wow, the kids loved this! I used less water when I heated (we like it thicker) and just added the basic ingredients to the oatmeal without the cream cheese or cinnamon sugar topping. They are asking for more. Also, I noticed that my tummy seemed to like this better. Some times oats make me burp but not this time. Genius!
Oh that’s wonderful! So happy that your family enjoyed it 🙂 Thank you so much for sharing that with me.
Since going (mostly) Paleo, I have almost forgotten about oatmeal. It used to be my favorite thing to eat! This recipe gives me a reason to finally check out gluten-free oats.
I hope you get to enjoy some. 🙂 Soaking them makes them so much easier for the body to digest, I have noticed a huge difference when I make them this way.
Cinnamon ROLL is probably one of the best flavors EVER!! This oatmeal definitely has the power to get even the WORST MORNING PERSON up and at em! 😉
Very true 😉

Thank you! 🙂
Great post!
You said to dump the oat mixture in a saucepan ..is that including the water it’s been soaking in? Or do you strain it?
Thanks!
Hi Jas, yes you use all of the oats mixture including the soak water then you add the additional water listed too. Hope you enjoy it as much as much family does. 🙂
This will surely become a staple in our house as we eat oatmeal 2-3 times a week! Best way to feed a large family! And soaking oats overnight actually helps stretch them as grow bigger in size! Thank you! 🙂
Thank you! I hope you get to enjoy some! It’s so yummy! 🙂
