I mean really, who doesn’t love the toppings on coffee cake? They’re the best part!
I have always been a huge fan of the crumbly streusel topping on coffee cake.
I grew up with the kind of coffee cake that you get at mainstream grocery stores in a box (you know the kind I’m talking about).
My mom also used to take me to her favorite local coffee shop and I’d often get their coffee cake or carrot cake (yes, my mom, bless her heart, was cool like that and let me have carrot cake for breakfast).
I miss my mom like crazy, always, every day. She was the best mom.
The holidays remind me of her because she LOVED the holiday season. Christmas was SO important to her and she loved everything about it. We always had Dolly Parton and Kenny Rogers’ Once Upon a Christmas album or George Winston’s December album on.
Decorating our Christmas tree was everything to her. She would tell me how the magic of Christmas was stripped away when she was a kid – that they only got to have the tree up for one day (because other family members didn’t like Christmas) and then it was taken down.
It really bothered her as a child and she told me that she would always make Christmas extra special for us. And she did.
Food-wise, the holiday season makes me think of homemade holiday cookies like chocolate crinkles and gingerbread, hot chocolate with marshmallows, the yellow Sherry cake my mom used to make and lots of cinnamon maple-y goodness.
And treats for breakfast of course!
Coffee cake, pies, crisps, seasonal cakes, and muffins galore! Yes, it is that time of the year.
My fond love for these things probably comes from my mom since she loved them too.

Hi, I loved reading your story about your mom so warming and heart felt. I donāt know what went wrong but when I baked these they turned out like glue. They also bubbled over and dripped butter everywhere in my oven. I followed the recipe to a t. I noticed the batter was soupy as well when I put it in the muffin tin. Did anyone else have this happen?

Hi Elana, I wish I knew what happened with yours but I’ve never had that problem with the batches I’ve baked. I’ve made these muffins many times and they’ve never turned out like glue or overflowed. The texture should be soft and tender. Did you use Otto’s cassava flour or a different brand? Otto’s is the only brand I recommend as other brands will produce different results. Did you add the collagen? What brand did you use?
Hi! I wanted to like these sooo much but they were sooo oily ( I used the avocado oil). Just touching them made my hands very very greasy! Iām guessing they would be fluffier and less āheavyā if I had used the butter? Or maybe I did something wrong? Thanks!
Hi Pilar, they should not be oily like you explained at all. I usually make these with avocado oil and I’ve never had them be oily. Did you use Otto’s cassava flour – I don’t recommend any other brand. Did you use Perfect Supplements collagen – again, I don’t recommend any other brand. What brands did you use? These muffins should not be a super soft “moist” muffin like others are, these are more in the middle of that and a denser texture.
