We decided to team up again and co-authored this Low-Carb Cooking with Your Instant Pot® cookbook!!
In this cookbook, we share 80 fast and easy family recipes for making delicious dishes the quick and low-carb way.
A little bit about us: Rudy is a self-taught cook who has over 10 years chef-experience working in restaurants. He’s also a private chef as well as the main cook in our home. Emily is also a self-taught cook with over 15 years experience cooking gluten-free real food. She loves to cook at home too, but ended up being mostly a baker as she took a step back from household cooking during the cookbook writing process since she was pregnant.
One of the special things about this cookbook is that Emily was very pregnant with TWINS during the process. Photo shoots were harder on her this time around and often resulted in her being out of breath (getting the right shots can be exhausting when pregnant and carrying two babies!!).
Emily had a very healthy pregnancy and loved feeling her boys moving around like crazy. One of our sons was a natural birth, but sadly our second son got into a life threatening position during birth causing his heart to stop, which caused severe brain damage. He lived 7 days on life support in the NICU.
In many ways, this book is a tribute to our son Ronan, as he was constantly on our minds during the process, as well as being nourished by the recipes in this book.
We live in Northern California with our three children. Our daily life is mixed with typical chaos, work work work, never-ending dishes and laundry, a kitchen that almost always has dirty dishes, cutting boards and kitchen tools all over the countertops (because we make real food for every meal), plus all the normal household chores and other things … that being said, we are always looking for ways to get our meals on the table faster - and we have found the Instant Pot® to be a huge help.

Yes! Most of the recipes are egg-free and nut-free! Many of the recipes do include dairy, however lots of them are adaptable and some list dairy-free substitutions

Yes! All of the recipes in this cookbook support your family’s wellness with real, nourishing and gluten-free ingredients. Although all of the recipes are gluten-free and grain-free, many are easily adaptable. All recipes are soy-free.
