Think chocolate chips cookies meets strawberry cheesecake. Of course the two are so delicious on their own. But put them into a cookie together and oh my goodness they’re AMAZING!
Soft chocolate chip cookies have always been a favorite of mine. They’re one of the first things I learned how to bake when I was a little girl. I used to make them with my grandma and my mom. As I got older, I made them with my friends. I love how food can take you back to special memories.
And then there’s classic, creamy, rich cheesecake. Swoon! Cheesecake is an all time favorite of mine and my husband’s too. We LOVE cheesecake!
Chocolate chip cookies and cheesecake go so well together!
Of course I had to mix the two together and add some sweet, juicy strawberries into the mix. These Strawberry Chocolate Chip Cheesecake Cookies are a treat, a super special treat, but I still wanted to make them more nourishing than regular cookies.
How do I make these cookies more nourishing?
I add grass-fed collagen and gelatin!
These grain free, egg free cookies are packed with protein from a few of my favorite superfood ingredients. Grass-fed collagen is the most abundant protein in the human body and plays a key role in numerous bodily functions (source). Gelatin is basically cooked collagen and made up of collagen protein, just in slightly different form.

Cassava flour is not tapioca flour. Cassava is 100% Yuca, a root vegetable. Tapioca is a bleached and extracted starch. Cassava flour is a whole food; the entire root, minus the peel. I only recommend this cassava flour. It is the highest quality cassava flour available.

Hi, Can I substitute another type of flour? I know I won’t be getting all of the benefits of the Cassava flour but I don’t want to buy another ingredient that I won’t use often, if I can avoid it. I’m really looking for recipes that use gelatin in either form and these sound delicious!
Hi Susan, I haven’t tried these with another flour at this point. It’s possible that a gluten free flour blend would work, but I can’t say for sure since I haven’t tried these that way. That’s great that you’re looking for ways to incorporate more gelatin. π

Could the quantity of maple sugar be reduced ?
Hi Theresa, for this recipe, no, because it will change the consistency and texture too much. With baking it’s a little bit harder to reduce sweeteners and keep the same texture – unless you’re using a sugar alcohol like erythritol (although I have not tested this recipe with one).
