Quiche ... it's one of those dishes that seems so fancy ... but it's really so simple + easy to make.
They are one of my favorite things to make when I am in a hurry and don't have hours to spend putting a meal together. All it takes is a some simple ingredients ... BROCCOLI + BACON + EGGS + CREAM + CHEESE, a little bit of prep time and 30 minutes to bake. Voilà! You have a delicious meal ... elegant enough to serve to guests, feed your whole family or have leftovers for the next day.
BROCCOLI AND BACON QUICHE {Grain Free}
YOU WILL NEED: 9 ½ inch Pie Dish {I use a glass pie dish}, Large Sauté Pan, Large Mixing Bowl, Standing Grater
Broccoli and Bacon Quiche {Grain Free}
Perfect for a holiday breakfast, special dinner, or a delicious lunch reheated the next day.
Ingredients
- 7 eggs - preferably pastured or organic
- 1 pint organic cream {not ultrapasteurized}
- 1 cup organic mild cheddar cheese, grated
- ½ cup organic sharp cheddar cheese, grated
- ½ cup organic jack cheese, grated
- ¼ cup organic parmesan cheese, grated
- 6 ounces organic or pastured bacon, cooked until crispy
- 1 ½ cups broccoli florets, lightly steamed or sautéed*
- ½ teaspoon dried thyme
- ½ teaspoon sea salt (<-- salt)
Instructions
- Preheat oven to 325 degrees F. Grease a pie dish, set aside.
- Cook bacon until crispy {this takes about 20 minutes}. Set aside.
- While the bacon is cooking, steam the broccoli for about 5 minutes. You can also do a quick sauté in the leftover bacon grease if you prefer. Set aside.
- Grate the cheese, set aside.
- In a large mixing bowl, beat eggs and cream until fully mixed. Add dried thyme, salt and grated cheese, stir to combine.
- Crumble the bacon and evenly distribute in the greased pie dish.
- Add the broccoli to the pie dish and evenly distribute.
- Pour the egg mixture over the bacon and broccoli.
- Bake for 30-40 minutes, until golden brown around the edges, light golden brown on top and a knife comes out of the center clean.
- Allow to cool for at least 15 minutes to set.
- Serve immediately or refrigerate for later.
Notes
If you can find raw or grass-fed cream and cheese, by all means, use that!
*Leftover roasted broccoli is delicious in this quiche too.
Storage: Cover the quiche and refrigerate for up to 3 days. It's absolutely delicious reheated the next day. I reheat mine on a low temperature in the oven for about 10 minutes.

INGREDIENTS I USED: I use this organic dried thyme. I use this sea salt, it’s my favorite. I try to find the best deals on organic raw cheddar cheese. I usually end up buying Organic Valley’s Raw Cheddar Cheese or their Grassmilk Raw Cheddar Cheese {my local natural foods co-op has coupons sometimes + they offer 10% off one day a month, so I try to take advantage of those deals}. Organic Valley also has a grated Mexican cheese blend {sharp cheddar, colby + jack} that would work great in this quiche as well. Quiche is my go-to for busy nights as well. It comes together so quickly and it miles better than slapping together a PB&J! LOL! You're right--it feels fancy and decadent, but I could probably make it in my sleep (and I probably have!). LOL!
