Cabbage, the word alone is enough to make some people shudder. I have to say though, it is one of my favorite vegetables. When prepared properly, it can be almost sweet.
I used to not like cabbage. The only way I had ever had it was boiled. Let's face it, cabbage when boiled is not always wonderful. But, then I learned about the wonderful world of roasting vegetables. It's pure bliss and one of my favorite ways to prepare just about any veggies.
Roasting veggies allows them to brown and caramelize, which brings out the natural sweetness of the vegetable. Yes, you heard me right, you can make cabbage sweet!

There are a few ways to brown your cabbage but my favorite way is in the oven. I find this method to be pretty low maintenance and super easy. Plus, you don't have to worry about it burning too much like when you fry it on the stove top.
This is also my boy's favorite way to have cabbage. We eat it often because cabbage is cheap and it's great at stretching out a meal like soup or stir fry. Just slice it pretty thin and most people don't even notice it's there.
To eat it as a side though, my kids love it roasted. In fact, I’ve served this to many people who claim not to like cabbage and simply love it!
You can make it as simple as using olive oil and sea salt or you can spice it like I do with this recipe for Italian seasoned cabbage steaks. This makes a great side to just about any meal.
One of the keys to good browning in the oven is to have the right pan. I LOVE using these graniteware baking sheets or roasting pan. What you really need to avoid though is glass. I find it just doesn't maintain the heat right for a good caramelizing.

Italian Seasoned Roasted Cabbage Steaks

Ingredients
- 1 head small cabbage
- 1-2 tablespoons olive oil
- 1 teaspoon sea salt (<-- this is my favorite sea salt)
- 1 teaspoon garlic powder
- 1 teaspoon oregano
Instructions
- Preheat oven to 425 degrees F.
- Grease baking sheet or place on parchment paper.
- Slice cabbage to be about ¼-1/2 inch thick.
- Place cabbage on baking sheet and spread half the oil and seasoning on the cabbage.
- Flip cabbage over and use the reminder of the oil and seasoning on the slices.
- Place in oven for 10 minutes.
- Flip the cabbage with spatula and bake for another 10 minutes.
