These Loaded Scalloped Potatoes are always a crowd pleaser. You can't go wrong with cheesy, buttery, thinly sliced potato goodness topped with lots of crispy bacon, fresh cultured sour cream and chopped cilantro.
Scalloped potatoes are pure comfort food.
They're a favorite in my home - well potatoes in general are. They're one food that everyone in the family likes. That means I make them at least once a week.
Home fries, baked fries, roasted potatoes, baked potatoes, bacon wrapped potatoes, twice baked potatoes, potato salad, roasted potato wedges, mashed potatoes, cheesy potato casserole ... you get the picture.
We love potatoes.
Potatoes are the perfect side dish and breakfast or brunch food too!
My husband is definitely a meat and potatoes kind of guy. My oldest, Little Love, really enjoys potatoes. It's one of the few foods that I know she'll eat and enjoy with the whole family. And then there's Tiny Love, she'll pretty much eat anything and loves potatoes.
I love potatoes too. They always remind me of my mom. She loved potatoes! Potato salad, potato chips and french onion dip, baked potatoes with butter and sour cream, twice baked potatoes, mashed potatoes, home fries {her favorite were my husband's home fries} and scalloped potatoes.
Clearly we're a potato-loving family.
These loaded scalloped potatoes are fully of cheesy goodness and crispy bacon!
My husband gets credit for this recipe. The first time he made these I took a bite, my eyes got huge and I said something along the lines of, "these are the best potatoes ever" ... because they were.
We had these for dinner that night and wow did they stand out as one of my favorite meals ever.
These AMAZING loaded scalloped potatoes are also perfect for breakfast and brunch too. Or a side dish, really, they're so good you can eat them for any meal. Or snack. Or dessert.
Now these aren't your "normal" scalloped potatoes. These aren't the classic deep dish casserole of thinly sliced potatoes in a creamy sauce. Those are great, but these loaded scalloped potatoes are different.
Thinly sliced potatoes baked with cheese make this dish extra special.
These have layers of thinly sliced potatoes, but instead of going into a casserole dish with a cream sauce, these are spread out on a baking pan with lots of cheese. All of that glorious cheese becomes creamy goodness with some crispy cheesy edges. So yummy!
We love to top these unbelievable cheesy, garlicky scalloped potatoes with lots of organic crispy bacon, fresh cultured sour cream and lots of chopped fresh cilantro.
Cilantro because that's what we use in my home the most. My husband is Latino, so cilantro is kind of a staple in our home.
But by all means, if you don't care for cilantro, go ahead and add a different kind of green like Italian parsley, green onions or chives.
Enjoy every bite because these baked loaded scalloped potatoes are so good.
Loaded Scalloped Potatoes
Loaded Scalloped Potatoes {Grain Free}
These Loaded Scalloped Potatoes are always a crowd pleaser. You can't go wrong with cheesy, buttery, thinly sliced potato goodness topped with lots of crispy bacon, fresh cultured sour cream and chopped cilantro.
Ingredients
Potatoes:
- 12 red potatoes or 10 small Russet potatoes, peeled and thinly sliced
- 3 tablespoons grass-fed butter, cubed
- 2 garlic cloves, minced
- ½ teaspoon sea salt (this is my favorite mineral-rich sea salt)
- 2 ½ cups cheddar cheese, grated - divided
- 8 slices cooked crispy pasture-raised or organic bacon, crumbled
Optional Toppings:
- Cultured Organic Sour Cream
- Chopped Cilantro, Italian Parsley, Green Onions or Chives
Instructions
- Preheat oven to 350 degrees F. Line large bar pan/baking pan/jelly roll pan with unbleached parchment paper and set aside.
- Peel and thinly slice potatoes, about ¼" thick. If you have a mandolin by all means use that. Otherwise just do your best to carefully thinly slice the potatoes.
- Evenly distribute and layer potatoes and minced garlic across lined baking pan. Add dots of butter on top of the potatoes and season with sea salt.
- Bake for 10 minutes, remove potatoes just to stir and and evenly coat with melted butter. Return to oven and bake for 20 minutes. Using caution, carefully remove pan from oven and sprinkle cheese all over tops of potatoes. Return to oven and bake for about 30-35 minutes or until potatoes are fully cooked through and cheese is bubbling with light golden brown edges. Remove from oven and allow to cool for about 15 minutes before serving.
- Top with crumbled crispy bacon, sour cream and chopped cilantro/parsley/green onions/chives. Enjoy!
