Roasted chicken is pretty much awesome in general. My family {specifically my kids} goes crazy for crispy roasted chicken skin. That golden, seasoned, salty, crunchy skin is the best.

I don’t know about you, but roasted beets is probably one of my all-time favorite things to roast. They are so delicious! That sweet, earthy goodness, there’s just nothing better. Except maybe when it’s paired with fresh citrus zest and fresh rosemary.
Herby aromatics plus sweet orange … so good! These mouthwatering flavors go so well with roasted chicken, beets, carrots and fennel.

That is so beautiful! I really, really, really wish I liked beets. But all I taste is dirt! My daughter LOVES them, and we’re making a roasted beet dip today. Right now, my house smells like roasted dirt. They are so pretty, but I just can’t get past that taste! I’m sure my daughter will like this though so I’ll have to make it for her.

I made this last night with some substitutions. I used boneless chicken thighs and golden beets. It was amazing! I wished I added more fennel! I will be making this again!

I cooked this last week. It was mind blowing Ly good. Especially because itโs the first dinner Iโve ever COOKE down in 14 years of marriage. My wife has high blood pressure so you are helping Superman with this recipe. I cut salt in half, used thyme instead, and tonight will use clementine zest. Olive oil instead of butter. Fish instead of chicken.
