Lemon Blueberry Breakfast Strata
Healthy Lemon Blueberry Breakfast Strata {Gluten Free}
This Healthy Lemon Blueberry Breakfast Strata is a protein-packed, delicious, sweet way to start the day. It’s full of juicy blueberries, a hint of citrusy lemon and has a special creamy ingredient.
Ingredients
- 3 tablespoon grass-fed butter or ghee, melted and cooled
- 4 pastured or organic eggs
- 1 ½ cups organic whole milk
- ½ cup real maple syrup or warmed honey
- ½ cup Nancy's organic cultured whole milk cottage cheese or lowfat cottage cheese
- 1 loaf day old gluten free bread, cut into 1" cubes
- Juice and zest of 1 lemon
- 1 ½ teaspoon vanilla extract
- 2 ½ cups fresh blueberries, divided
Instructions
- Grease a 1 ½ quart casserole dish and set aside. Preheat oven to 350 degrees F.
- Add healthy fat of choice and eggs to a very large mixing bowl. Break the egg yolks with a spatula or wooden spoon and stir the mixture to fully combine. Add the milk and maple syrup or honey and stir to combine. Add the cottage cheese and stir to combine. Pour the bread cubes into the mixing bowl then add the lemon juice, lemon zest, vanilla extract and 2 cups of the blueberries. Using a spatula, gently fold and mix all of the ingredients together.
- Pour the mixture into a greased casserole dish and bake for 40-50 minutes, or until bread cubes are slightly golden brown and the egg mixture has cooked through and puffed up (the strata will puff up towards the end of the baking time and will settle when cooled).
- Serve immediately topped with the remaining ½ cup fresh blueberries and served with maple syrup.
Notes
- My preference for the bread is gluten free sour dough bread, but any bread will work.
- I recommend placing a baking sheet on the rack below the strata in the oven to catch any bubbling over spills just in case. Depending on the shape and size of your casserole dish, this may or may not happen. About 1 tablespoon of the filling usually bubbles over with my casserole dish.
- This strata is also delicious topped with a dollop of Nancy's organic whole milk Greek yogurt, homemade whipped cream or a scoop of homemade ice cream.

OH my! I hadn't thought about strata for MANY years. It was a dish that I often fixed for my family...a main dish with tuna and cheese, etc. Yum. I wonder if I can do this with a almond/coconut flour bread as I don't buy other bread. If it wouldn't go to mush...and I have no clue about that as I have never tried .,.but I really need to try this! Thanks for another nice recipe!

I haven't tried it with almond or coconut flour bread, I bet it would work. I wonder if you'd need to toasted the chunks first though - like you do when making croutons? Are you ale to do a gluten-free sour dough? I like using Bread SRSLY. I hope you get to try some 🙂
