I don't know about you, but I love this time of year. Beautiful leaves are changing colors and dropping, the weather is cooler, homes are cozy and warm, love and gratitude is in the air, AND the food! We can't forget about all of the yummy, comforting food.
Everyone loves the traditional nostalgic flavors of the holidays. When you think of Thanksgiving, what food comes to mind? Turkey, mashed potatoes, gravy, cranberry sauce, yummy side dishes and STUFFING!
Of course we all think of and love the holiday pies, cakes and ice cream too, but let's get back to the savory goodness.
Stuffing or dressing, whatever you choose to call it, is truly one of the most special parts of holiday meals. People go crazy for stuffing, my family included. Stuffing has been a favorite of mine since I was a kid. I didn't grow up with the box stuff, I grew up with real, homemade stuffing.
When I was young, we all played a role in the cooking for the big family Thanksgiving celebration. My mom always made scalloped potatoes, cranberry sauce and an apple pie. Once I was old enough to cook, I made the vegetarian cornbread stuffing every year. It was a family favorite, and I LOVED it! But as I grew older, I learned gluten was not my friend.
Eating gluten free doesn't mean you have to miss out on holiday stuffing!
So many people these days either have a gluten allergy, have gluten sensitivities, don't feel good eating gluten or simply just choose not to eat gluten for health reasons.
Making allergy-friendly options for your holiday table makes your loved ones who have food restrictions feel cared for and acknowledged. That's what the holidays are about right? Compassion, LOVE and kindness. A little goes a long way.
No one wants to feel like they can't have or enjoy holiday foods. Coming up with solutions like GLUTEN FREE STUFFING help bring the "I CAN eat this" joy back to the holiday meal.
Making gluten free stuffing is so easy when you use Udi's Gluten Free crispy and delicious French Baguettes.
All you have to do is pop these French Baguettes in a preheated oven. They're done so fast and before you know it you'll have these gorgeous loaves staring back at you. Once they're cool to the touch, get your hands in there, slice up the bread and tear into the perfect stuffing size pieces.
If you have kiddos, let them help with this part. They love to tear the bread into pieces and feel like they're part of the process.
Pop those bread pieces back into the oven for a few minutes to help dry them out a little. This helps ensure they'll be just perfect for the stuffing. Then get the rest of your stuffing goodies going.
Cut up the cauliflower into bite size florets and get them into the oven to roast. By the time you're done prepping everything else, these beautiful golden brown cauliflower pieces will be ready to go.
Prep everything else. It's super easy to do, and fun too! Promise. And if you have kiddos, get them involved in the prep too. They love to help cut {if age appropriate} and stir.
Get your onions and some garlic sautéing in some grass-fed butter. Once they're perfectly caramelized, add some sage, rosemary and sliced celery. Get ready for an amazing aroma coming from this! It smells AMAZING!
Now get out a big bowl to mix up all of your tasty stuffing ingredients. Toss in your dried out gluten free French Baguette pieces, roasted cauliflower, caramelized onions, herbs and celery, halved chestnuts, whole cranberries, diced apple and dates, bone broth and of course lots of melted grass-fed butter!
Get this beautiful deliciousness into your oven. Be ready for your home to smell like Thanksgiving, this gluten free stuffing smells crazy good! And the taste ... well, let's just say it's scrumptious!
We are big stuffing fans in our home, and I've made many versions, but my husband told me, "this is the best stuffing you've ever made". Yep, this stuffing is jam packed with so much yumminess, it's a crowd pleaser for sure.

Roasted Cauliflower Cranberry Gluten Free Stuffing
Roasted Cauliflower Cranberry Gluten Free Stuffing is absolutely heavenly and so easy to make. This savory gluten free stuffing does not skimp on flavor! It's full of so many textures and delightful flavors like roasted cauliflower, caramelized onions, chestnuts, cranberries, dates, apples, sage and rosemary.
Ingredients
- 2 Udi's gluten free french baguettes {1 package}, baked and torn into 1" cubes
- 1 medium head organic cauliflower, chopped into small florets
- 1 organic yellow onion, diced
- 3 fresh garlic cloves, chopped
- 3 organic celery stalks and leaves, thinly sliced
- 2 tablespoon fresh sage leaves, chopped
- 2 tablespoon fresh rosemary leaves, chopped
- 1 cup organic cranberries
- 1 organic apple, cored, peeled and diced
- 7 medjool dates, pitted and diced
- 20 roasted and peeled chestnuts, halved - optional
- 1 ¼ teaspoon sea salt (<-- this is my favorite sea salt)
- ½ cup + 4 tablespoon grass-fed butter, melted
- 1 ½ cups homemade bone broth or store-bought organic bone broth
Instructions
- Bake Udi's gluten free french baguettes according to package instructions. When bread has cooled enough to touch, preheat oven to 375 degrees F and cut or tear bread into 1" pieces. Place on a baking sheet and bake for about 10-15 minutes, just until dried out like a crouton {not long enough to turn the bread golden brown}. Set aside.
- While bread is drying out in the oven, wash, prep and chop the cauliflower, onion, garlic, celery, sage, rosemary, apple, dates and chestnuts. Set aside.
- Once the bread pieces are done, preheat the oven to 425 degrees F, toss cauliflower florets with 2 tablespoons melted butter, season with ½ teaspoon sea salt and place in the oven to roast for 15 minutes or until cauliflower starts to turn slightly golden brown around the edges.
- Add 2 tablespoons butter to sauté pan. Add onion, garlic and ½ teaspoon sea salt and sauté over medium heat for about 10 minutes, stirring occasionally, until the onions start to caramelize and become slightly golden brown around the edges. Add celery, sage and rosemary and sauté over medium heat for about 3 to 5 minutes.
- Add bread pieces to a large mixing bowl. Top with roasted cauliflower, caramelized onion-celery-herb mixture, cranberries, apples, dates, chestnuts, ¼ teaspoon sea salt, ½ cup melted butter and bone broth. Gently stir to incorporate.
- Pour stuffing into 9x13 casserole dish and bake uncovered in preheated 375 degrees F oven for about 20-30 minutes, or until the top is light golden brown on the top and heated through. Allow to cool slightly and serve. Enjoy!
Notes
STORAGE: Keep in an air-tight container for up to 3 days in the refrigerator. Reheat in the oven on a low/warming temperature.
