Everyone loves pie!
It’s one of those foods that brings people together. Pie is a comfort food, a special food, a food that is celebrated.
We look forward to apple pie during the fall and custard-filled pies during the winter holidays. We get excited about seasonal fruit pies during the spring and summer months. And who doesn’t get big heart eyes when they see a homemade lemon meringue pie or chocolate meringue pie?
Pie is simply pure food LOVE.
What’s better than healthy pie for breakfast?

Or any savory pie for that matter? They are so good! I mean really, how can you go wrong packing some nourishing food into pie dough?! You can’t.
Wouldn’t you love to wake up and enjoy pie for breakfast? It’s such a great way to start the day! Good-for-you, yummy pie crust, healthy fats, shredded meaty goodness, green veggies like Brussels sprouts, chunks of celery root, some fresh herbs and a little bit of sweet from apples and maple syrup. Bliss!!!
Breakfast hand pies are so fun!
These mini pies are pretty easy to make. Yes, they take a little prep time, but it’s so worth it! These hand pies only require rolling out one layer of dough. It’s super forgiving dough, you don’t have to worry about a perfect top layer, and there’s no need to fuss about a lattice top. These hand pies are meant to be rustic!
To make these healthier, I use my favorite grain free flour, cassava flour. I find that it’s the most similar to regular all-purpose flour. The bonus of this grain free flour is that is has resistant starch. When eaten cool, resistant starch is full of prebiotics that feed probiotics, which helps support digestion and the gut. Isn’t that awesome?!
Once you get get your pie dough made, all you have to do it get your filling ready. Use some leftover shredded meat and do a quick sauté of the veggies and you’re good to go.
Roll out the very forgiving chilled pie dough, spoon some of the meaty + veggie goodness into the centers of your pie dough circles and fold up the edges. The dough will crack a little bit and that’s okay! Just smooth it and pinch it back together. Then pop these lovely hand pies into the oven to bake and in under 30 minutes you’ll have some super delicious little pies to enjoy!
