Fuel your morning with this deeply flavored Cauliflower Breakfast Casserole.
Breakfast casserole's can feed a crowd or be made ahead of time and used as single servings throughout the week.
Everyone will love this deliciousness that is similar to a quiche or hash brown casserole, but without the crust and packed with healthier ingredients.
This healthy cauliflower breakfast casserole is brimming with cauliflower "rice", stuffed with nutrient dense kale, loaded with herby garlic flavor and packed with a major protein punch!
Where is all of the protein coming from you ask? Happy to tell you!
You'll get a little bit of protein from some shredded cheesy goodness, crispy organic bacon and some quality, pastured or organic eggs. But the protein-rich star ingredient is WHOLE MILK cottage cheese.
Yes, you read that right, whole milk.
I'm so excited because one of my favorite brands for cultured dairy, Nancy’s, has a newly released product! Cultured whole milk organic cottage cheese!
It's almost impossible to find quality, authentic, cultured, WHOLE MILK cottage cheese these days. Pretty much everything on the market is fat free, low fat and lacking in live cultures.
I'm so thrilled about this because it's from a family owned- and- run company that I have supported for many years. They have been making TRUE cultured dairy products with live probiotic cultures since 1960 {way before it became popular and people started to learn how important probiotics are for gut-health}.
But back to this stellar casserole!
I love adding whole milk cottage cheese to this cauliflower breakfast casserole for the creamy flavor, but most importantly for the protein boost!
One cup of cottage cheese goes into this casserole supplying 28 grams of protein!
While this meal was created to be served for breakfast, it would also make a delicious brunch, lunch or even dinner served alongside a salad.
My family loves to enjoy this tasty, flavorful breakfast casserole for all meals of the day. My youngest loves it for lunch served with some fresh, seasonal fruit and my husband loves to eat it for a quick breakfast or packed for lunch on-the-go.

Healthy Cauliflower Breakfast Casserole
Healthy Cauliflower Breakfast Casserole {Low Carb}
Change up your breakfast routine with this delicious, healthy Cauliflower Breakfast Casserole. It's grain free, low carb, easy to make, protein packed and full of nourishing ingredients.
Ingredients
- 2 small heads of cauliflower or 4 cups cauliflower "rice"
- 2 tablespoon grass-fed butter or ghee, melted
- 1 cup Nancy's organic cultured whole milk cottage cheese
- 1 ¼ cup shredded organic cheddar cheese, divided
- 1 cup pre-cooked or steamed chopped kale
- 6-8 pre-cooked strips of crispy organic bacon, crumbled
- 1 teaspoon fresh thyme leaves
- 1 teaspoon garlic powder
- 1 teaspoon Celtic sea salt (<-- salt)
- Juice and zest of ½ lemon
- 4 pastured or organic eggs, gently whisked
- ¼ cup grated parmesan cheese, plus more for garnish
- Freshly chopped Italian parsley or cilantro, for garnish - optional
Instructions
- Grease a 9" round pie dish or a 1 ½ quart casserole dish and set aside. Preheat the oven to 350 degrees F.
- Cut the heads of cauliflower into florets and add to a food processor or a high-powered blender that has a chopping option. Pulse just until cauliflower has turned into a "rice" consistency, do not puree the cauliflower. You might have to do this in a few batches depending on the size of your food processor or blender.
- Add the cauliflower "rice" to a large mixing bowl. Add the melted healthy fat of choice and give it a good stir. Next add the cottage cheese, 1 cup cheddar cheese, cooked kale, crumbled bacon, thyme, garlic powder, sea salt, lemon juice and zest, stir to combine. Add the whisked eggs and stir to combine. Pour the mixture into the greased dish and sprinkle the reserved ¼ cup of cheddar cheese over the top followed by the grated parmesan.
- Bake for 40-50 minutes or until the top is light golden brown and the egg mixture has cooked through.
- Serve immediately garnished with optional freshly chopped Italian parsley or cilantro and/or an extra sprinkling of grated parmesan cheese.

Jen
Have you tried to replace the cottage cheese with an dairy alternative? I'm lactose intolerant but want to try this recipe!!
Emily Sunwell-Vidaurri
Hi Jen, I haven't tested this without the dairy at this point. It's possible you could sub with a cashew cream or cashew cream cheese to get a similar consistency. I hope you're able to make it work for you. 🙂
ChihYu
This casserole looks SO GOOD ! I can have it everyday !!!
Emily Sunwell-Vidaurri
Thanks so much ChihYu! 🙂
Katja`
I love cauliflower! Can't wait to try this. Looks delish!
Emily Sunwell-Vidaurri
Thanks Katja! 🙂
Cristina Curp
Because it's cultured is it lactose free? I wonder! I could love to be able to add cottage cheese back into my diet. This recipe looks divine!
Emily Sunwell-Vidaurri
Hi Cristina, no, the cottage cheese is not lactose free. It's full of probiotics because it's cultured, but the lactose is still there. I'm guessing you would need to sub with something else, maybe a cashew cream cheese.
Darryl Edwards
Do you have a dairy-free version? Any suggestions or ideas would be great as this cauliflower rice casserole looks superb and very tasty!
Emily Sunwell-Vidaurri
Thanks so much Darryl! I know, dairy can be such a hard one. My family eats dairy, but I only do okay with small amounts. I haven't tested this one without dairy though. I bet it would be delicious with a cashew cream or cashew cream cheese subbed instead.
Kendra Cardoza
I love the idea of swapping out hash browns for cauliflower in this casserole! I haven't given cottage cheese a go again but I may do better with this one because it's cultured! Thanks for the great recipe idea! I can't wait to try this one out soon!
Emily Sunwell-Vidaurri
Thanks Kendra! Dairy can be such a hard one for so many.
Becky Winkler
This loaded casserole looks so amazing! Perfect to make ahead and enjoy throughout a busy week.

Can I leave out the kale? I am not sure IO would like it in this dish =. 🙂
Emily Sunwell-Vidaurri
Of course! 🙂 If you want you could try another green or just leave it out.
Lynn
This was so delicious! I made this yesterday and it was a hit with my husband and 28 year old daughter, who is here visiting. She doesn't like a lot of vegetables so it was great to find something she enjoyed. Thank you so much...will definitely make this again.
Emily Vidaurri
Oh that's wonderful! Thanks so much for sharing that, I'm so glad you all enjoyed it. ?
