Summertime is the perfect time for frozen treats!
Most of you know that I am a sucker for ice cream, frozen yogurt, sherbet, and popsicles. How can you go wrong with that delectable, creamy, icy deliciousness? You can't. Really ... you can't go wrong at all. Life is too short not to enjoy the simple little pleasures. I am all about doing what feels right for you, and if that means enjoying a bowl or two of frozen yogurt or having a scoop of ice cream with breakfast, then by all means go for it! Enjoy every bite!
One thing I love about frozen treats is that they are truly easy to make at home. You get to control what goes into your homemade frozen yogurt or ice cream. How cool is that?! Don't get me wrong, I indulged in Ben & Jerry's ice cream and frozen yogurts for many years, and I loved them ... but Ben & Jerry's doesn't quite fit into the category of what my body needs these days.
My sweet friend Megan also has a fond love for beautiful food + ice cream! She is truly one of the gentlest, kindest people I have ever had the pleasure of knowing. I was so thrilled when I found out she had a cookbook coming out. I couldn't wait to sit down and look through the pages ... I knew it would be full of beautiful, nourishing recipes. And of course, what do you think I looked for first? That's right ... ice cream and frozen yogurt. I knew there would be some awesome ice cream recipes in her cookbook because like me, Megan loves ice cream too. Carrot Cinnamon Frozen Yogurt. It’s so refreshing, perfectly sweet + absolutely delicious. It's full of probiotics too!
Carrot Cinnamon Frozen Yogurt
YOU WILL NEED: Blender, Ice Cream Maker
Carrot Cinnamon Frozen Yogurt

Ingredients
Instructions
- Place all ingredients into a blender and puree until the ingredients are homogenized, or until the sweetener is fully dissolved — 50 seconds or less.
- Pour mixture into an ice cream maker and freeze according to manufacturer’s instructions.
Notes
For an AIP non-dairy variation, use 2 cups coconut milk in place of the cultured cream.
