Delicata squash is so delicious when roasted simply with parmesan cheese.
This squash has a very mild flavor, it's my favorite of the winter squash varieties because of it's delicious flavor. It's also the only winter squash variety that doesn't need to be peeled first. You can eat the outer skin!
Other winter squash varieties can have overpowering flavors or be quite bold in flavor, but not Delicata squash.
It's simply sweet and buttery and oh so perfect when it gets roasted and all golden brown with melty, crispy parmesan.
Three real food ingredients is all that's needed for this side dish.
This side dish is so simple to make.
All you need is some Delicata squash, healthy fat of choice, shredded parmesan cheese and a little bit of sea salt if you'd like to season it. That's it!
All it takes is a little prep work slicing the Delicata squash and removing the inner seeds and any darker orange slimy membrane (just like how it looks inside a pumpkin).
Once you've got the squash slices prepped, mix them up with your healthy fat of choice, then spread them out in an even layer on a baking sheet. Sprinkle the parmesan all over the tops, then in the preheated oven they go to roast.
This Easy Roasted Parmesan Delicata Squash is perfect for any weeknight meal and fancy enough to be served to guests or served at the holiday table.
If you need to feed a lot of guests or if you plan on serving this at a holiday dinner, this recipe can easily be doubled or tripled, you'll just need a couple extra baking sheets.

Easy Roasted Parmesan Delicata Squash
Easy Roasted Parmesan Delicata Squash is such a simple side dish and only 3 ingredients! This mild-flavored squash gets cooked to perfection with the most delicious crispy, cheesy crust.
Ingredients
- 2 medium size Delicata squash
- ¼ cup melted grass-fed butter, ghee or avocado oil
- ½ cup shredded parmesan cheese
- Optional Seasoning: ½ teaspoon sea salt (<-- salt)
Instructions
- Preheat the oven to 425 degrees F. Prep a large baking sheet with edges {like a jellyroll pan, I used a stoneware large bar pan} - line it with unbleached parchment paper. Set aside.
- Wash and prep the Delicata squash, make sure to scrub off any dirt then dry them with a clean dish towel. With the squash lying flat on cutting board, cut off the ends of the Delicata squash and discard, then slice the squash into ¼ inch thick slices. Remove and discard the inner seeds and any darker orange slimy membrane - you can do this with clean hands, a teaspoon or a pairing knife. Add the Delicata squash rings to a large mixing bowl, add the healthy fat of choice and optional sea salt, giving everything a stir until fully coated.
- Dump the coated Delicata squash rings on the lined baking sheet, arranging in a uniform single layer. Sprinkle the parmesan cheese over the tops of the Delicata squash rings.
- Bake at 425 degrees F for about 20-35 minutes until the Delicata squash rings are tender, light golden brown and the parmesan is crispy. Depending on your oven, this could take more or less time to bake. Keep an eye on the Delicata squash rings around 20 minutes to gauge how much more time your oven will need. Remove from the oven when done.
- Serve immediately.
