Oh my goodness they are so darn delicious! I never knew how amazing olives could be until I made my first batch of roasted olives over 15 years ago.
Who knew that hot, roasted olives could be such an amazing thing?
The first time I made these Roasted Maple Citrus Herb Olives for my family and friends many years ago, we all devoured them!
Everyone was in awe of how heating them at a high temperature could bring out a creamy, rich flavor that is indescribable.
Back then I made this delicious appetizer in a foil pack, but I stopped using foil when I had kids. Using foil isn't worth the health risk for me and my family, so I came up with a new cooking method.
Same recipe! Just roasted instead of steamed in a foil pack and this cooking method makes the recipe even better!
This simple appetizer has very little prep work and is so easy to make.
All you need a variety of olives, lemons, oranges, fresh thyme, fresh garlic cloves, avocado oil and a little maple syrup.
Mix everything together in a mixing bowl and dump it all onto the baking pan. That's it!
Pop the Roasted Maple Citrus Herb Olives into the oven and roast for about 20 to 25 minutes.
After the olives and citrus slices are light golden brown, about 5 minutes before the cook time is done, you pull the pan out of the oven and drizzle the optional maple syrup over everything.
Back into the oven they go to finish roasting for another 5 minutes.
Then get those babies onto a serving platter or into a serving bowl and watch people gobble them up!

Roasted Maple Citrus Herb Olives
Roasted Maple Citrus Herb Olives are the most delicious little bites and appetizer! This crowd pleasing, 7 ingredient, real food, hors d'oeuvre is the perfect finger food for holiday tables or any seasonal party.
Ingredients
- 16 oz. any variety organic green olives (approx. 2 jars, about 2 cups)
- 16 oz. marinated organic black olives - not canned black olives (approx. 2 jars, about 2 cups)
- 2 small organic lemons, sliced and/or sliced and halved
- 2 small organic oranges, sliced and/or sliced and halved
- 5-7 fresh garlic cloves
- Several fresh thyme sprigs - a good handful (about ½ cup)
- ¼ cup avocado oil or quality extra virgin olive oil
- 3-4 tablespoon organic maple syrup - optional
Instructions
- Preheat the oven to 425 degrees F. Prep a large baking sheet with edges {like a jellyroll pan, I used a stoneware large bar pan} - line it with unbleached parchment paper. Set aside.
- To a large mixing bowl, add all the ingredients except for the maple syrup, giving everything a stir until fully coated.
- Dump the oiled-coated mixture on the lined baking sheet, arranging in a uniform single layer.
- Bake at 425 degrees F for about 20-25 minutes until the olives and citrus become slightly light golden brown in some spots. Depending on your oven, this could take more or less time to bake. Keep an eye on the olives and citrus around 15 minutes to gauge how much more time your oven will need - if needed give the pan a shake. When 5 minutes is left on the cook time, remove the pan and drizzle the maple syrup over the entire pan of olives, citrus and herbs. Place back in the oven to finish the 5 minutes left cook time. Remove from the oven when done.
- Serve immediately.

YOU WILL NEED: Large Bar Pan or Large Jellyroll Baking Pan, Unbleached Parchment Paper
- For Low Carb, Keto & Whole30: Omit the maple syrup.
