This delicious Bacon Green Bean Scalloped Potato Casserole is packed with a creamy, grain free white sauce, lots of cheesy goodness, green beans, garlic, thyme and topped with crispy crumbled bacon bits.
Green bean casserole and scalloped potatoes tend to be common, traditional recipes that grace the holiday table.
I know they were for me growing up. There was always a green bean casserole of some sort (probably made with canned soup and store-bought crispy breaded onions) and my mom always made the most delicious scalloped potatoes from scratch.
My husband and I decided to combine the two common holiday recipes to make the ultimate comfort food side dish.
We were so thrilled with the result! We've made it several times already because it's just so good. In fact, we tend to eat it for any meal - breakfast, lunch and dinner. Yep, it's good for any meal!
I especially love the leftovers reheated the next morning for breakfast. So yummy!
This side dish is so easy to prepare and make.
You don't even need to make a roux for the cream sauce! Best of all, the roux can be made grain free or gluten free - you choose.
Mix all of of the "cream sauce" ingredients together and give it a good whisk! Set that aside and get all of your produce prepped.
Grab yourself some shredded cheese, then everything goes into a casserole dish to bake and get all bubbly and golden brown.
While it bakes you can whip up some super crispy bacon - or better yet, prep that ahead of time!
Once the Bacon Green Bean Scalloped Potato Casserole has baked, top it with all of the crumbled up crispy bacon bits.
Then serve this masterpiece as a meal in itself or get it ready to share on the holiday table.

Bacon Green Bean Scalloped Potato Casserole
Bacon Green Bean Scalloped Potato Casserole is the perfect holiday side dish or comfort food for any day. This delicious, grain free dish is loaded with creamy, cheesy goodness and is so easy to make.
Ingredients
- 5 organic russet potatoes, peeled and very thinly sliced
- 1 ½ cups fresh green beans, trimmed and cut in half
- 1 cup heavy cream
- 1 cup whole milk
- ½ cup sour cream
- 2 tablespoon cassava flour (this is the only cassava flour I use)*
- 1 teaspoon sea salt (this is my favorite salt)
- 1 teaspoon garlic powder or garlic granules
- 1 teaspoon dried thyme
- 1 ½ cup shredded Italian cheese blend (the blend I use has equal parts Provolone, Romano and Parmesan cheese)
- 1 package organic bacon or turkey bacon, precooked until crispy (most packages are 7-8 slices)
Instructions
- Preheat your oven to 375 degrees F. Grease a 9x13 casserole dish and set aside.
- Add all of your prepped potatoes and green beans to a very large mixing bowl. Set aside.
- In a large measuring up or medium mixing bowl, add the cream, milk, sour cream, cassava flour or gluten-free flour, salt, garlic powder and thyme. Using a whisk, stir everything until mostly combined (there will be a few small lumps from the flour and spices, that's okay!). Pour this mixture over the potatoes and green beans. Then add 1 cup of the shredded cheese and give it a good stir to combine. Pour everything into the greased casserole dish. Sprinkle the remaining ½ cup cheese over the top.
- Bake at 375 degrees F for about 1 hour and 20 minutes, or until potatoes are cooked through and the top is bubbly and light golden brown. Remove from the oven and allow to rest for 15 minutes before serving.
- While the Casserole is Cooking: Prepare the bacon, making sure to cook until crispy enough to crumble into little bits.
- Top the baked casserole with the crumbled crispy bacon bits. Serve immediately.
Notes
- YOU WILL NEED: Large Casserole Dish {I use this}, Cutting Board, Knife, Large Mixing Bowl, Large Measuring Cup or Medium Mixing Bowl, Whisk
- Storage: Keep in an air-tight container in the refrigerator for up to 3 days.
- *Gluten Free Flour Option: Swap the cassava flour with an all purpose gluten free flour blend - this is my favorite gluten free flour blend.
