It's one of my favorite ice cream flavors. There's just something about it that is so comforting. That minty flavor is so good!
But I have to admit, I don't really care for chocolate chips in the ice cream. The chocolate chips in store-bought mint chocolate chip ice creams often tend to feel/taste waxy.
Now don't get me wrong, I LOVE me some chocolate and chocolate chips, but for some reason, chocolate chips in mint ice cream just bugs me.
My family is in agreement with this one - but we all still love mint ice cream.
When I was pregnant with Tiny Love, I craved mint ice cream {+ lemon and chocolate ice cream too}. But even though I loved it, I just couldn't stand that waxy texture of the chocolate chips! I would end up picking them out, which is kind of a pain.
Since I love to make homemade ice cream in my ice cream maker, my husband suggested I make it with shaved chocolate. Best idea ever!!! I don't know why I had never thought of that before!
Just grab yourself your favorite organic, fair trade chocolate bar and finely chop it up or grate it.
The texture with chopped and shaved chocolate is amazing and so much better than chocolate chips.
This ice cream is made with whole food ingredients plus an extra special ingredient - grass-fed gelatin.
Why use gelatin?
For a few reasons: 1) it's full of protein and has gut healing properties and 2) it helps keep the ice cream from becoming rock hard. It also gives the ice cream an awesome texture.
This ice cream is so good and you just can't go wrong with the shaved chunks of quality chocolate. Enjoy!

Real Food Mint Chocolate Chip Ice Cream
This Mint Chocolate Chip Ice Cream is full of shaved and chunked, quality, organic chocolate. It's so refreshing, made with real food ingredients, naturally sweetened and absolutely delicious!
Ingredients
- 2 cups raw, organic or grass-fed cream
- 1 cup raw, organic or grass-fed whole milk
- ¼ cup light colored raw honey
- 1 tablespoon organic vanilla extract
- 1 teaspoon mint extract (*See Notes for Fresh Mint instructions)
- 1 tablespoon arrowroot flour - optional
- ¼ teaspoon mineral-rich salt (my favorite salt)
- 1 tablespoon grass-fed gelatin (this is the only brand I recommend)
- ¼ cup hot filtered water
- 1 to 2.8 oz quality organic chocolate bar, finely chopped or coarsely shaved (this is what I use)
Instructions
- Add cream, milk, honey, vanilla extract, mint extract, arrowroot flour and sea salt to a blender. Pulse just until combined. Set aside.
- Boil ¼ cup filtered water. Add 1 tablespoon gelatin and whisk vigorously until fully dissolved.
- Immediately add liquified gelatin to ice cream mixture in the blender. Pulse or blend the mixture for about 5-7 seconds until everything is fully incorporated.
- Prepare ice cream maker. Turn ice cream maker on and pour ice cream mixture into the ice cream maker. Churn according to the manufacturer's instructions.
- When ice cream starts to have a "soft serve" texture, it's done. Remove the mixer and fold in the chopped chocolate {if you like less chocolate, add 1 oz; if you prefer a lot of chocolate, add 2.8 oz}. Serve immediately or use a wooden spoon to transfer to the ice cream to a freezer-safe container. Cover and freeze until ready to serve. If it's frozen overnight, make sure to remove it from the freezer and set it on the counter for at least 15 minutes before serving.
Notes
YOU WILL NEED: Small Saucepan, Whisk, Quart Mason Jar, Blender, Ice Cream Maker, Freezer-Safe Ice Cream Container
DAIRY FREE VERSION: Substitute full fat coconut milk for the dairy.
The vanilla extract, arrowroot flour and gelatin keep the ice cream from becoming rock hard. The gelatin adds an extra boost of protein plus has nourishing gut healing properties.
FRESH MINT OPTION:
- Omit mint extract and use 1 cup of freshly chopped mint instead.
- A few hours {or more} before making the ice cream, add milk to a small saucepan. Bring to a low simmer and remove from heat.
- Add chopped mint to the hot milk. Cover saucepan with a lid. Allow milk + mint to stand for about 20 minutes to infuse.
- Once the mint has infused in the milk, strain it making sure to squeeze the mint leaves to get out all of the flavor. Discard the mint.
- Place mint infused milk in the refrigerator to chill until cold. Once milk has chilled, follow above directions for making the ice cream

Mint Chip is my favorite ice cream but definitely not the ugly green color. This is perfect and I love infusing milk with mint. Quick note though: in the ingredients you list honey but in the directions you mention maple mixture - I know those can be used interchangeably but just wanted to let you know that. I'm new to making ice cream. We've been making yogurt and freezing it, blended with fruit, honey, maple syrup, etc...all whole foods...raw milk, etc. I don't have an ice cream maker. Is there any way around buying one? If not, can you make a few recommendations so I can start making the pitch to the hubs...? It is possibly doable if you have a high powered blender like a Blendtec, if you followed instructions similar to this - this is my friend Megan's blender ice cream recipe. I LOVE my {affiliate link} Cuisinart ice cream maker though - they make a quality one and I've used their ice cream makers for over 10 years. I'm going to try to adapt this and use milk kefir in it with infused mint. I don't like chocolate chips in ice cream either. I love using the Italian straciatella method to drip chocolate into the churning ice cream.
