Sweet, refreshing, healthier, homemade ice cream is the best!
I know, I know, I’m obsessed with homemade ice cream. I can’t help it. It’s one of my favorite foods.
I even love ice cream with breakfast.
If you’ve never had homemade ice cream with waffles, you’ve been missing out. Seriously, it’s pretty amazing.
Ice cream tends to be a staple for me. Now, I’m not talking about just any ice cream. I’m talking about the real deal, HOMEMADE, healthy, nourishing ice cream.
Making homemade ice cream with real food ingredients is so important to me.
True, REAL ingredients with no refined sugars, using healthy full-fat organic dairy {and even better yet, raw cream/milk} or rich, creamy coconut milk. Then add in some good-for-you ingredients like grass-fed collagen {good for gut-health} and Celtic sea salt {trace minerals}.
That’s one of the benefits of making homemade ice cream, you get to control the ingredients. This means you can make it as healthy and nourishing as you want!
So go ahead and enjoy your homemade ice cream!
Savor those spring and summer strawberries and turn them into a delectable, creamy ice cream treat.

Yield 1 quart
Creamy vanilla notes mixed with sweet strawberries makes the perfect frozen treat. This naturally sweetened Real Food Strawberry Ice Cream is delicious and so easy to make!
Ingredients
- 10 ounces frozen (or fresh) organic strawberries
- 1 1/2 cups raw, organic or grass-fed cream (see Notes for dairy-free version)
- 1/2 cup raw, organic or grass-fed whole milk
- 1/4 - 1/3 cup light colored raw honey (see Notes)
- 1 tablespoon vanilla extract
- 2 tablespoons hydrolyzed grass-fed collagen - optional (<-- this is the only kind I use and love)
- 1/4 teaspoon Celtic sea salt - optional (<-- this is my favorite sea salt)
Instructions
- Add strawberries, cream, milk, honey, vanilla extract, collagen and sea salt to a blender. Pulse just until combined.
- Prepare ice cream maker. Turn ice cream maker on and pour ice cream mixture into the ice cream maker. Churn according to the manufacturer's instructions.
- When ice cream starts to have a "soft serve" texture, it's done.* Serve immediately or use a wooden spoon to transfer the ice cream to a freezer-safe container. Cover and freeze until ready to serve. If it's frozen overnight, make sure to remove it from the freezer and set it on the counter for at least 15 minutes before serving.
Notes
YOU WILL NEED: Blender, Ice Cream Maker, Freezer-Safe Ice Cream Container
- Make sure to use a lighter honey like clover, star thistle or orange blossom {wild flower varieties tend to be too strong for this flavor combo}.
- I run my ice cream maker for about 20-25 minutes until it's a thick soft-serve consistency. My family loves it like this. If we're not eating it right away, I usually place it in the freezer for a few hours to firm up a bit.
- Fresh strawberries are wonderful, but try and freeze them ahead of time first. Freezing them helps the ice cream form quicker. If that’s not a option, fresh is fine, it just takes longer for the ice cream to come together.
- DAIRY FREE VERSION: Substitute full-fat coconut milk for the dairy.
- If you don’t use raw dairy, look for high quality organic cream from cows that graze on grass {grassfed/pastured}. Ideally, look for products that do not ultra-pasturize their products.
- STORAGE: Cover in an airtight freezer-safe container and store in freezer for up to 2 weeks.

Mouthwatering! We pick strawberries end of June and I can’t wait to make some ice cream!
So fun Renee! Have the best time! xo
Oh. my. goodness. My hubby is going to go crazy over this! 🙂 I need to find myself some strawberries asap! 🙂
I hope you get to make some Raia! 🙂
Love the sea salt in there! Lovely!
Thanks love xo
There is nothing in the world like homemade ice cream. We have started adding peppermint essential oil and a bit of spirulina for a mint chocolate chip version. My all time favorite is strawberry ice cream, though.
That sounds so good Andrea! I love mint chocolate chip too. 🙂
I am going to make an attempt at creating an ice cream cake sometime this week. Once I have the process down with store-bought ice cream, I’m thinking this might be the perfect option to make my ice cream cake a totally homemade affair.
I hope you get to make your own. It’s so fun and delicious too!
We love making homemade frozen ice cream and treats from our fresh cows milk, cream and now fresh strawberries ripening.
That’s wonderful Candy! I love that you have your own cows! I don’t, but I’m super excited because we just bought into a local herd share. I’m so excited to be getting raw grass-fed A2/A2 milk now. You just can’t do better than fresh.
Ah-ha! No wonder my version of strawberry ice cream didn’t turn out well! It’s because I didn’t blend the strawberries! If you don’t do this, the ice cream will have a lot of ice crystals in it which isn’t very nice. These look great!
I’ve done that before too, I know what you mean. I think it helps when the base flavor is solid strawberry, then you could always add in some whole chunks of strawberries once the ice cream starts to firm up a bit, that way you still get bits of strawberries too 🙂
So delicious! I hate the artifical strawberry flavor. Love that you use the real thing here–it makes such a difference from the flavored syrups!
So true, there really is a huge difference. 🙂
Ohhh I am so ready to the warm weather and ice cream! I’ve tried making my own gelato but not ice cream. May have to try this!
I hope you get to make some 🙂
Homemade ice cream is the best! This sounds fantastic with the fresh spring strawberries!
I think so too Leah! 🙂 Love homemade ice cream!
Perfect summer recipe! Pinning for later!
Thanks so much for the pin 🙂
Drool! Cream, strawberries, sea salt…so many of my favorite things!
Thanks Linda xo 🙂
These cones are too cute! I’ve been meaning to try making ice cream and this gives me motivation.
xox Katherine
Thanks! I haven’t bought any in years, but my kids were begging for a cone, so I got them some gluten-free cones to enjoy. I hope you get to make some ice cream 🙂
My strawberries are in bloom right now. What keeps the ice cream from getting too hard in the freezer.
Using a higher alcohol content helps with that Anna, that’s why I use 1 tablespoon alcohol based vanilla. You could also add liquified gelatin but I don’t do that in this recipe. When I make a batch we don’t usually have leftovers, but if you do, you can just let it sit out on the counter a bit so it softens up.
Yummy, I absolutely love strawberry ice cream. I can’t wait to try this recipe. Thanks for sharing ????
Thanks! I hope you get to make some 🙂
I can 100% guarantee that if I made this yummy strawberry ice cream, my family would inhale it right away. And, even better, I have lots of strawberries, so I can make this ASAP 🙂
Oh fun! I hope you get to make some 🙂
This looks SO good! I’ve pinned for later… Because I think this will be the perfect treat to enjoy this summer. Thanks for the recipe!
Thanks for the pin Rebecca 🙂
Strawberries are every where right now and this is perfect timing for me…it is SO hot in N. Cali this week. Everything cold is welcomed 🙂
Right?! I’m in Nor CA too. It’s so hot today! I hope you stay cool 🙂
This look soo good. I had never thought about adding hydrolyzed Collagen before, but it makes sense because dairy can sometimes be tough on the gut! 🙂
Thanks! I love adding collagen to whatever foods I can. I figure it’s good for gut health 😉
I’ve always wanted to make ice cream. This looks so yummy and I just love your photos! Thanks for sharing.

These look so good and creamy, Emily. Homemade is the best.
Thank you Barbara! 🙂
Can you substitute grass fed gelatin for the collagen in this recipe?
Hi Jessica, they are not interchangeable in this recipe as gelatin gels and collagen dissolves in any liquid cold or hot. You can omit the collagen if you’d prefer.
I found myself craving for strawberry ice cream so when I see this recipe I’m immediately hooked ! Can’t wait to make the recipe!
I hope you get to enjoy some soon ChihYu! 🙂
