Bacon and zucchini are perfect together.
I mean really, bacon goes pretty darn well with most things. Next to pancakes, waffles or eggs, topped on potatoes, stuffed in mushrooms, wrapped around cheese-stuffed Medjool dates, layered on top of burgers - you get the picture.
I'm not advocating for heavily processed, low-quality bacon. I'm talking about organic or heritage and pasture-raised bacon that comes from quality sources.
Knowing where your food comes from is always a good thing when possible. If you live in a town that has farmer's markets, get out there and talk to the farmers and ask about their practices. Usually they are happy to talk to you about it.
You can't get much simpler than 2 main ingredients.
Bacon and zucchini. Simple but oh so perfect.
As we approach summer, there is going to be an abundance of zucchini. What better way to use some than with crispy bacon?!
These Dairy-Free Keto Bacon Wrapped Zucchini are low carb, Paleo and Whole30® friendly.
They're not stuffed with anything, they're just simple.
Because when it's hot outside, fancy isn't something I'm aiming for. I want easy to prepare foods that don't take much prep time but still taste just as yummy.
The process is so easy. All you have to do is cut the ends of of the zucchini and quarter them into long strips. If you want you can sprinkle them with garlic granules or garlic powder or even dried herbs, but I'm all about simple here so I usually don't use any.
Then preheat your oven get your baking sheet ready to roast the bacon wrapped zucchini. If you don't have a well-seasoned baking sheet like a stoneware one, then go ahead and line it with unbleached parchment paper first.
Start wrapping each zucchini strip with one piece of bacon and place them on the baking sheet leaving a little bit of room between them. That's it for prep work! Pop them into the preheated oven and roast them until the bacon is crispy {not burned!} and the zucchini is tender.

Dairy-Free Keto Bacon Wrapped Zucchini
Dairy-Free Keto Bacon Wrapped Zucchini are so simple and easy to make. They're a delicious side dish and go perfectly alongside your breakfast. Go ahead and serve this seasonal squash for dinner too!
Ingredients
- 4 organic zucchini, ends removed
- 8 pieces sugar-free organic or pasture-raised bacon (approx. 1 pack)
Instructions
- Preheat oven to 400 degrees F.
- Wash and prep the zucchini by cutting into quarters/fourths. I cut them in half, lie them on the flat side and then cut them in half again. Set them aside on a baking pan.
- Cut 8 pieces of bacon in half. Wrap one half slice of bacon around each zucchini spear and place the bacon wrapped zucchini spears on the baking pan.
- Bake for about 30 minutes depending on how crispy you like your bacon (my oven cooks them to my family's liking at around 35 minutes - if your oven cooks fast, this could be as fast as 20 minutes and up to 40 minutes for slower cooking ovens; for best results check at 20 minutes to gauge how much longer you'll need to bake them).
- Remove from the oven and enjoy immediately.
Notes
- These are absolutely delicious dipped in or drizzled with dairy-free Paleo Caesar dressing. (<-- this is my favorite kind of store-bought Caesar!)
- I prefer to bake these on a stoneware baking pan compared instead of my stainless steel baking pan.
