For many people, me included, summer fruit season is something to look forward to. There’s an abundance of summer fruits to enjoy - peaches, nectarines, plums, pluots, cherries, nectaplums, watermelon, honeydew, cantaloupe, strawberries, blueberries, blackberries, raspberries, Concord grapes and more!
All of this delicious summer fruit means you must make fruit crisps, cobblers, pies and galettes! There’s just nothing like these fresh summer treats. Each bite always feels like something truly special.
Peaches are one of my favorite summer fruits. They’re so juicy, sweet and delicious! Plus they’re amazing in baked desserts. Peach pie, peach crisp and peach cobbler à la mode are a summer must!

While I do enjoy baking, Northern California usually has pretty hot summers and I don’t enjoy heating up the house with the oven later in the day. Using the Instant Pot to make Instant Pot desserts is the easy solution!
Instant Pot Stuffed Peaches are a summertime must-make dessert!
These delicious Instant Pot stuffed peaches are stuffed with a slightly cinnamon-y crisp/cobbler filling. They steam to perfection on the Instant Pot steam basket insert. Once the pressure in the Instant Pot rises, these stuffed peaches take only 3 minutes to cook!
How to Make Instant Pot Stuffed Peaches
It’s so easy to make this Instant Pot recipe with peaches. All you need is 7 ingredients and an Instant Pot!
Start by picking out some fresh, semi-firm, but ripe organic peaches. Yes, choosing organic peaches for this recipe is important because they are currently #8 on the EWG’s Pesticides in Produce Dirty Dozen™ list. Make sure to give the peaches a quick wash and dry them.
Grab a cutting board and a knife and slice ¼-inch off of the tops of the peaches, then discard. Using a sharp paring knife, cut around the pit and hollow them out, removing the pit, then set aside. Make sure to leave at least ½-inch of the inside peach flesh so the peaches stay intact when cooking. If the peaches are very firm, use a teaspoon or small spoon to help loosen and scoop out the pit and the flesh around it.
Then gather the remaining ingredients - cassava flour, maple sugar (or dry sweetener of choice), grass-fed butter, cinnamon, almond extract, sea salt and water for the Instant Pot.
HOW TO MAKE INSTANT POT GLUTEN-FREE PEACH CRISP OR PEACH CRUMBLE
I use my favorite grain-free flour in this crisp/crumble filling - cassava flour for the crumble filling. This particular cassava flour is the best gluten-free and grain-free flour I have found for grain-free baking.
I love this cassava flour because it’s very similar to regular flour when it comes to cooking and texture, which is pretty cool for a gluten-free flour. Most gluten-free flours require several flours or binders, but that usually is not needed with cassava flour.
Cassava flour also happens to be a resistant starch when eaten cool (resistant starch = prebiotics that feed probiotics) which helps supports digestion and the gut.
I also love that this cassava flour is owned by a small, family-run company. They even make organic cassava flour for those who are wanting an organic alternative. This flour hands down is always my choice for grain-free and gluten-free baking.
HOW TO MAKE THE CRISP OR CRUMBLE MIXTURE
Get ready to make the crisp/crumble mixture for the Instant Pot stuffed peaches. In a mixing bowl or shallow dish, add the cassava flour, maple sugar or dry sweetener of choice, cold butter, cinnamon, almond extract and sea salt. With clean hands, mix everything together until the mixture is crumbly.
Next, evenly distribute and fill the pitted/hollow peaches with the crumble mixture.
ASSEMBLE THE INSTANT POT
Place your Instant Pot on a flat counter or surface. Then place the Instant Pot steamer insert or steamer basket in the Instant Pot. Next add the water and ¼ teaspoon almond extract to the Instant Pot (the almond extract is optional, it adds an almond essence while the peaches are steaming).
Carefully place the stuffed peaches on top of the steamer insert or steamer basket in the Instant Pot.
Next place the lid on the Instant Pot, close it and make sure the lid is locked and the steam release valve is sealed.
Turn the Instant Pot on by plugging it in, then press the “Manual” or “Pressure Cook” button (depending on the model you have) - normal/high will be highlighted on some models. Then press the minus “-” button and decrease the time to 3 minutes. The Instant Pot will pause for a second, then make a beep and say “On” on the screen - at this point the Instant Pot will turn on and start to build pressure. The countdown of time will automatically start once the Instant Pot has come to pressure.
WHEN THE STUFFED PEACHES HAVE COOKED
When the Instant Pot is done cooking, it will beep. Depending on the Instant Pot model, press the “Keep Warm/Cancel” or “Cancel” button. Then unplug the Instant Pot and use an oven mitt to carefully “quick release”/open the steam release valve. Steam will spray out of the steam release valve, so stand back or put a cloth dish towel over the steam.
When the steam stops venting and the silver dial drops, carefully open the Instant Pot lid.
Using an oven mitt and tongs or an oven mitt designed for the Instant Pot steamer insert, carefully lift up and remove the steamer insert or steamer basket and place it on a large heat-safe dish. Let the stuffed peaches rest and cool for at least 10 minutes, preferably 20 minutes.
Then get ready to enjoy and devour these delectable treats! Eat the Instant Pot stuffed peaches as is or for an extra special treat, serve them à la mode with vanilla ice cream or cinnamon ice cream!
RECIPE FAQS: TIPS FOR INSTANT POT STUFFED PEACHES SUCCESS
- Can Instant Pot stuffed peaches be stored? For the best flavor, it’s best to enjoy this Instant Pot dessert the same day. However, you can store them in a covered air-tight container in the refrigerator and eat within 24 hours.
- What types of peaches should be used in this recipe? You can use either yellow or white peaches in this recipe, just make sure they are ripe, but semi-firm. You do not want to use ripe or overripe peaches in this recipe or they will turn to mush when cooking.
- Do you have a favorite sweetener to use in this gluten-free Instant Pot peach recipe? Yes! My preference is maple sugar, however you can also use muscovado or sucanat. Most likely, any dry sweetener of your choice will work.
- How should these Instant Pot stuffed peaches be served? These stuffed peaches are best served when they have cooled for about 20 minutes, but they can be eaten sooner - just know they are super hot. I prefer to let them rest for about 20 minutes so the crisp/crumble doesn’t fall apart as much and because they’re so hot if you eat them too soon. Instant Pot Stuffed Peaches are easy to make in just minutes! Fresh peaches get stuffed with a cinnamon crumble and taste amazing à la mode with ice cream. This gluten free Instant Pot dessert is like an individual peach crisp, peach cobbler or peach pie, pure summer bliss in every bite!
Ingredients
For the Stuffed Peaches:
- 5 medium organic peaches or 6 small peaches
- ¼ cup cassava flour (<< this is the only cassava flour I use and recommend)
- ¼ cup maple sugar, muscovado or sucanat
- 2 tablespoon cold grass-fed butter
- ½ teaspoon ground cinnamon (<< this is my favorite orangutan-safe sustainable cinnamon)
- ¼ teaspoon pure almond extract
- pinch sea salt (<< this is my favorite sea salt)
For the Instant Pot:
- 1 cup water
- ¼ teaspoon pure almond extract - optional
Instructions
- Select 5 medium-size fresh, semi-firm, but ripe organic peaches. Give the peaches a quick wash and dry them.
- Get a cutting board and a knife and slice ¼-inch off of the tops of the peaches, then discard. Using a sharp paring knife, cut around the pit and hollow them out, removing the pit, then set the peaches aside. Make sure to leave at least ½-inch of the inside peach flesh so the peaches stay intact when cooking. If the peaches are very firm, use a teaspoon or small spoon to help loosen and scoop out the pit and the flesh around it.
- To make the crisp/crumble mixture for the stuffed peaches, in a mixing bowl or shallow dish, add the cassava flour, maple sugar or dry sweetener of choice, cold butter, cinnamon, ¼ teaspoon almond extract and a pinch of sea salt. YOU WILL NEED: Instant Pot, Instant Pot Steamer Insert, Cutting Board, Knife, Mixing Bowl
- Naturally Sweetened: My preference for this recipe is maple sugar, however you can also use muscovado or sucanat. Most likely, any dry sweetener of your choice will work.
- Healthy Fat: This recipe has only been tested with grass-fed butter. Most likely ghee or another traditional fat like lard would work.
- Paleo Dessert: Most Paleo experts highly recommend grass-fed butter since it's high in nutrients including vitamin K2. If you are strict Paleo and dairy-free, ghee could be an option since the milk proteins are removed, however it has not been tested in this recipe.
- For the best flavor, enjoy these stuffed peaches the same day.

What a great idea to make baked peaches. With amazing peaches coming from the farmers markets right, this is a great idea for a quick desert and alternative use for them! You make them look so delicious! I love the photo of the hollowed out peaches. You are definitely convincing me to consider an Instant Pot. Two minute cooking time sounds amazing! I love almond extract in everything so I am sure I will love these. I would never of thought of adding it but now that I think of it, I bet it goes really well with the flavor of the peaches.

I don't have a instant pot. how can I do this?

Hi Vickie, you could bake them instead. I would suggest baking at 400 degrees F for 20 minutes. You'll want to bake them long enough for the top to be golden brown and the peaches should be soft, similar to the way a baked apple would be. Hope that helps! 🙂
